arohanui, It's a way of using leftover vegetables, to prevent waste. I'm sure most housewives, no matter where they live, would have their own " mix" depending on what they would normally cook. I grew up as a child of a poor family in the 1950's, my mother always made bubble and squeak. No food was allowed to be wasted. I make the dish myself, although my household is comfortably off. I put lots of different vegetables in the mix. I make it because we like it.

arohanui, Why are you using the term "Celt" when potatoes only became common in Europe/ British Isles in the seventh century. Long after "Celt" was a people. I think you are being racist and suggesting the Irish have some ownership of this type of dish. Do you not think that Europe, France, Germany... also had this dish. And the British.
