Which part of the gympie-gympie plant is poisonous?

If it only causes excruciating pain it a bit low level for Australia where nearly everything has evolved to kill people, Give the koalas and the sheep a few more generations and they’ll be up there with the spiders ! Do even the butterflies have ninja killing skills?

Something has to eat it. I think mosquitoes aren't around for any other good reason than to feed other creatures.

Sounds like a good way to torture someone who deserves to be without any repercussions. Simply throw them in a big patch of gympie-gympie, accidentally on purpose and run.
