Snail butter is a traditional recipe from which country?

Miss Sue, Butter without the gastropod for me.

I accidentally ate a snail. It was baked into some gross, yet fancy pastry. Yuck.

Why do the French use snail snot in their food when they are capable of making such wonderful food without it?
