cr8zyred, in a recipe, substitues for "lardons" would be regular smoked bacon, or panchetta, Canadian bacon or smoked ham... so that when diced and fried crispy would impart a salty, smokey flavor and/or crunchy texture

A real coq au vin is made with rooster. What is described here is probably the American version which spoil the all dish, the meat of a rooster is completely different than a regular chicken. It is more tough therefore it needs to be cooked several hours.
