Cacao originates from central Mexico and there are actually 4 types. Criollo which means of the original central mexican species. Forastero which means outside or external species. Trinitario is a blend of the two species that has been developed over time for export and growth in Africa and many South Pacific islands. The fourth type is called Nacionale and was thought extinct for about a thousand years before a small amount was rediscovered in wild jungles a few years ago.

KindKitten89, if you remove the husk of the beans you have cocoa nibs so good for you When I lived in Costa Rica we used to buy bags of cocoa beans and eat the nibs and bake with the powder. Very bitter but very good for you.

I am surprised that Africa especially West Africa is not mentioned has a cocoa producing region because I believe Ghana and Ivory Coast are very big cocoa producing countries in the world.
