lostiaz, Its delicious. Most people like fries or potatoes with gravy, well just add white cheese in between the two and you got poutine. You don't have to use curds.

When I lived in Ottawa, the local paper had an article about poutine being 50 years old. Apparently it was first created in Gatineau, Quebec. Legend has it, that someone ordered fries, gravy and cheese curds together and the restaurant owner said that if it was all in the same bag, it would be a mess (poutine) when he got home. This was published in the Ottawa Citizen in 2008
