Montana Lady, it is potable and lacking in minerals, some of which mainly come thru water. So, it is potable but not healthy. In desalination plants, after salts are removed from sea water, they need to add them back in as soft water is no good for sustaining metabolism.

Also, even destilled water is not a perfectly pure water because during a contact with air gases like carbon dioxide get disolved in it very quickly turning it into a weak acid and slightly raising its pH to 4-5.
