I prefer to use this variety of cheese more as a seasoning or condiment to enhance the flavor of what's being served.

vincent pounder, the cheap imitation smells bad but the authentic one doesn't have that smell. It's how you can tell whether it's genuine or not.

If you have only had the powdery form, you have not tried real parmesan. Get a block from your deli and grate or shave with a peeler onto your spaghetti, add to your garlic butter when making garlic bread too. Also put spoonfuls of grated parmesan onto a baking sheet and bake for 10mins then cool - parmesan crisps! Mmmm I'm hungry now!

You all must try feta cheese . It's the perfect cheese as it is very easy to digest that pediatric doctors recommend it for their colic infants.

vincent pounder, It's not real parmigiano if it smells like. I've smelt the fake one produced and sold outside of Italy and it smells terrible. Authentic parmigiano doesn't.
