Which sauce is a stable emulsion of oil, egg yolk, and acid?

alot of people refer to Miracle Whip as Mayonnaise but it's salad dressing and says so on the label.

Here in the Netherlands mayonnaise is put on a big variety of things by many many people.

My grandmother made all of her mayonnaise in a quart jar with a plunger like a churn. It was always good. Wish I had her recipe.
