though I'm not fond all cultures have extreme foods , the Germans have saurkraut , Koreans have kimche which are fermented foods ,we as Americans ingest the golden arches prepared foods which are probably more disgusting and unhealthy than any other food and usually prepared by digruntled teenagers who could care less .

It's preserved, like pickles, only with eggs. Even though I am Chinese I prefer fresh eggs too.

808stevan1, its essentially fermented. like Kim chi or saurkraut. not necessarily "rancid" but also not technically cooked.

the Chinese still eat everything possible due to the great famine caused by the emporers. I'd not choose to eat some of the crazy food over there, but I reckon if you're actually starving you would learn to eat anything at all.

Centenarian, wow u sound very adventurous, especially for a centenarian - l DEFINITELY would not try one of these eggs - I’ve seen them eaten on tv & that was enough to turn my stomach

it's a regular egg that's fermented and in clay. the process cooks it and comes out like a boiled egg but resembles jelly because of the black translucent color from the oxidation. think of jerky, meat is suppose to be red but drying it comes out black sometimes.

it's just like pickling foods or cheese that's fermented. However, I wouldn't recommend eating it plain as is unless you like really strong pungent flavors. I enjoy it in my rice congee, really the only time I eat it. never tried it in a dish before.

I read somewhere that the only things the Chinese do not eat are wolf’s heart and dog’s lungs as these are too bitter .
