Taramaiden, I'm a chef and the smoked salmon version is very popular. I serve it on a bagel with sliced tomato and I add capers to the sauce. Yum!!

My daughter makes a lower calorie version of this. It's sumptuous! I usually don't like eggs this way but it's very good. You can make it with wheat English muffins and a thinner sauce for diabetics.

I make them all the time but put the poached eggs on Croissants & top it with Bernaise sauce instead of Hollandaise sauce. Sooooo good but not low cal!
