Which medical speciality is concerned with perioperative care of patients before, during and after surgery?

A very well respected profession

I read somewhere that although anaestheologists know what the anaesthetics do, they don't really know how they do it, so I am very much in awe of what these guys do. We have so much to thank the medical profession for.
