I make pierogi regularly, usually 60 at a time. 30 potato and cheese and 30 sauerkraut. They freeze perfectly, so I always have a stash on hand. ;)

we call exactly the same thing in Russia "vareniki", they can be stuffed with potatoes, or potatoes and mushrooms, also there are sweet versions stuffed with the cottage cheese or cherries. We eat vareniki with sour cream or melted butter.
