Which fruit is the principal ingredient of a traditional 'tarte tatin'?

It’s a good thing one of the choices wasn’t butter. I watched a chef prepare a tarte tartin once. I didn’t believe you could get that much butter into the dough, let alone the butter used to cook the apples. Delicious.
