I would agree that Cucumbers don't freeze well either... but lettuce certainly turns out worse.

poor question. Lettuce can and will freeze (high water content). Should ask which cannot be frozen as a preservative method.

Iwonder, at least you can still use frozen tomatoes in soups and sauces. And after being defrosted, skins are easily removed without blanching.

Late mother in law used to freeze lettuce . Then dunk it in hot water to thaw it .
