Which of these is the fatty part of milk which rises to the surface?

i remember when there would be two inches of cream on top of the milk. Mom would shake the bottle to get it mixed back in the milk. This was when milk would actually be delivered to your door in the early hours of the morning.

When I was a kid, the milk was delivered to an insulated container on the back porch. The cream wAs on top. Either my mother shook the bottle to mix in the cream, or if she wanted to use the cream, she had a utensil that she carefully dipped into the cream enough times to bring out the amount she needed.

In England in freezing Winters ,Milk top would be Frozen in bottles and push metal top up and the Cream was a delight for Birds Breakfast.!! We are still able to buy Rich Jersey milk which does have at least 1inch of Cream on top.
