Little Saint, there are two styles of dumplings: drop dumplings (made from biscuit dough & spooned into broth causing them to be puffy/fluffy), or rolled dumplings (also biscuit dough but rolled out thin, cut into round shapes or thin strips and dropped into broth; these tend to be harder, doughier).
If they're rolled very thin & cut into strips, they resemble pasta. I grew up in the southern region of the US and dumplings are made in both styles. I prefer the fluffier drop dumplings.
