Scientifically speaking, what does the term 'anhydrous' mean?

Coffee is produced by freeze drying , didn’t know this is called lyophilisation . Worked in a coffee plant in the U.K. during a shutdown to thaw the freezing area . The coffee is dried at -46. The ice is several feet thick in places, and has to be cleared every three years which takes a couple of weeks
