I cooked a tomato free version of Imam Bayildi for an event with about 120 people attending... my favourite egg plant dish.... full of flavour and no bitterness from the skin. I'll have to try it with tomato one of these days.

eggplant is the only food allergy I have it makes my mouth and throat numb and my lips get a little swollen.
