What food takes the longest time to digest?

The fats that I eat don't get digested. They just travel directly to my waistline.

If you feel hungry before bed, a protein snack will stay with you. Evidently, a fatty snack will stay with you longer. I prefer high protein, low fat.

I think that there is a difference between saturated and poly-unsaturated lipids about digestion.
