Some years there are so many kangaroos, they need to be culled. the dingo fence removed their main predator and hunting is now licenced, so is ethically controlled. The meat is dark red, like most game meat. Very lean, hardly any fat, so the flavour is not as intense as it is in fatty meats. Similar to venison perhaps.

chloesmom822, they are Old Man kangaroos. Alpha males. And standing in an aggressive pose. Guard pose. And while they can attack and use their hind legs to eviscerate an opponent, they are not predators, so if you leave them alone, admire from a distance, they will not attack humans.
