I'm really glad this question and description was here. I've never really understood brining and the science behind it. I think I'll try this on some pot roast next time. It is incredibly difficult for me to get the juicy, tender, fall apart, melt in your mouth roast. Occasionally, I get it right but then the next time I make it and follow the same recipe, it ends up so dry you have to cut it into tiny pieces in order to chew it. I'm thinking I might try brining next time.
