Biscochito is the “state cookie” of which U.S. state?

Guillermo Jr., I wonder if they're similar to Italian biscotti? Similar terminology in language anyway. Does someone know?

we got a Airbnb in New Mexico a couple of summers ago. in the coffee room they had these cookies. boy, were they ever good.
