The name of what type of fish is often used to describe a sky dappled with small, fleecy clouds?

I've never heard the rhymes before but I have been aware of the mackerel sky and buttermilk sky since elementary school (about a thousand years ago) but don't remember learning that they were interchangeable.

It might be northern hemisphere terminology
