quicksilver, turmeric is NO substitute for saffron. Saffron had a distinct flavour, and turmeric's bitter root provides yellow color, but also a bitter, pungent, heavy flavour.

Paella comes from the Arabic work "ba'eya" which means leftovers, because the dish was made with all the leftovers at the end of the week.

Rice, olive oil, saffron and garlic are the main ingredient then you can do add anything but chorizo. We don't out chorizo in a paella. That is a Jamie Oliver invention.

Bunny , the trick is to add turmeric at the end of cooking (as heating gives it the bitter taste) for dying the food. However I agree with u, saffron tastes much better
