I make my Black Forest Cake with freshly whipped cream made with honey. I also use fresh Bing cherries and cherry brandy. It is a labour intensive cake, but well worth the effort.

baymax, It’s actually torte as in Schwartzwalderkirschtorte. But to digress slightly , in a legal case concerning Jaffa “cake” the law ( in England) is that if a sweet baked item is hard but goes soft with age it is a biscuit , if it is soft but hardens with age it is a cake . Schwartzwalderkirschtorte hardens so it is a cake . Incidentally a gateau is specifically a three layer cake I have had Black Forest cake with between 2 and 5 layers
