I recently learned that clarified butter could stand at room temp for long time without going rancid. so I tried. I boiled out the water and skimmed the foam off the top with papertowel. then poured into canning jar, added a small glass marble and shook until it "churned " solid. I did this 18 mo ago. its still not rancid. I put it in my survival foods. good as cooking oil too.

When you clarify butter, the Ghee is what you take out. To clarify butter you heat it and let it separate into the Ghee and the clarified butter. Ghee is solid at room temperature, clarified butter isn't.
