The only place I've ever been able to find this is New Orleans. I thought it was French.

jsh, We are used to thinking of pastry as pie shells, filo, etc. But in a broader sense it includes most baked goods other than bread.

There seems to be some confusion between sponge and pastry in the answer. I have always known them to be two quite different things.
