What is the Italian type of bacon called?

I saw a program recently about additives in bacon, nitrates is basically gun powder . They only add it to keep the bacon a nice pinky colour not turning blue

3/4 of the explanation is unnecessary, the question was about Pancetta, not about processed meats in general causing cancer.

Definitely sounds like something to NOT eat!
