What name is given to the flesh of a deer when used as food?

A lot of venison is eaten in these parts, and deer/venison jerky is consumed in considerable quantities. We use almost every part of the animal, not just the meat or for trophies. We have hills deer & plains deer. Plains deer tastes better than hills deer. Hills deer tastes like pine.
