Rinsing and draining it before frying, prevents it from absorbing all the oil in the pan and become soggy.

Idk about that! I made eggplant once, and was told to slice it and let it sit on paper towels to drain and that was supposed to take the bitterness away. It didn’t! I have eaten it cubed, breaded and deep fried. It wasn’t really bitter then though. That’s how my mom made it
