The reason it's placed at the head/bow is because on sailing ships the wind blows forward...just in case that wasn't obvious. Same with the galley on a lot of ships - the cooking smells get pushed ahead by the wind, so as not to distract the hungry sailors from their jobs.

head comes from the water pressure. One metre head of pressure means if you opened the tap the water would go up one metre. On a ship the water pressure needs to be controlled or the lower levels would have huge water pressure and the upper ones would not get water.
