I lived and taught in Wellington NZ for a year. I was fortunate to have Maori students and several Maori friends. I attended a hangi during my stay there. It was wonderful.

That is simply what they call there way. Many cultures cook in the ground. All may have different styles but still, all in the ground.

It is a hāngi not a hang. Delicious. Usually for an occasion. A lot of commercial venues sell a steamed version but it is not cooked in the ground so doesn't taste the same.
