The sheep cheeses I love are pecorino romano, Roquefort, and manchego. The rich flavor of the milk makes for an elegant dish. In the US, the parmigiana cheeses from Italy are cheaper, not more expensive than true Romano.

Right ✅️ US, the trick to drinking goat milk is-the first time you drink it, hold your nose. I don't know why this works, but it does. Hold your nose, swallow several gulps. wait a couple minutes. You wont notice any unpleasant odor or taste. If you haven't had any in awhile, repeat the process.

Manchego is delicious and one of my favorite cheeses. However, a good pecorino Romano is also excellent.
