Manchego is delicious and one of my favorite cheeses. However, a good pecorino Romano is also excellent.

The sheep cheeses I love are pecorino romano, Roquefort, and manchego. The rich flavor of the milk makes for an elegant dish. In the US, the parmigiana cheeses from Italy are cheaper, not more expensive than true Romano.
