I am Scottish and we call it bubble and squeak or fry up, it's usually made from the leftovers of a big traditional Sunday roast dinner. Yes, what ever is leftover is fried it's really delicious.

back in the 80s in Ireland after a nice Sunday Roast, on the Monday my mam used the leftovers of potatoes, cabbage and turnip and shallow fried them with shallots and spring onion. was really tasty.
