As a 504 native also, I just wanted to mention that no two gumbos are the same. And, neither one is "wrong ". Everybody makes it a little different.

As a Native New Orleans I make a delicious Gumbo without using oil to make my roux.

Im from LA GONZALES JAMBALAYA CAPITOL OF Louisiana GUMBO is good anyways as long as the roux and seasoning is right! and potato salad on the side! dont put it in the middle of your gumbo bowl! Then youll just have potato salad Gumbo! and Roux and mayonnaise dont mix well to my likes🤨😜🙂😇

I've never had gumbo. I like to try new things, but some necessary ingredients in gumbo are not to my liking: green peppers, okra, shellfish.
My son loves gumbo. There is a local restaurant in town that serves goo gumbo. He goes there occasionally.

As someone who has spent 95% of my life in Louisiana, this description is spot on. I'll say a couple of things...everyone has their own way of making Gumbo. There's no real right or wrong way, as long as the basics are there. Gumbo is a staple of any household and there's never a wrong time for it.

A lot of people put the rice right in it when it's cooking. I don't care for that. But potato salad sounds very good!
