i think you are wrong on a few issues. one of them being that the crusaders were a large peasant population. no, it was Knights, kings, remember Richard the Lionheart?? i think it was on three or four crusades that he made. the peasants didnt have access to horses, men, supplies, etc., it cost a lot of money to be a Crusader. the nobles would send their sons and squires, food, for example beef,lamb,pork, bread, water, Meade, wine, grains for their horses, yes they had more then one. a palfrey was a riding horse for long distances and the charger was a heavier type used as a war horse...poor people or peasants went but under the care or in league with a knight.
