A Shambles is a street of butchers. York's is the most famous example, but some other English towns & cities have them too e.g. Rugby. Meat and bone waste scraps were thrown into the street, making an unpleasant and odiferous mess. Hence 'shambles' a mess.

tia, The Shambles name comes from an old (medieval?) English word meaning slaughterhouse or meat market.
