Either what animals are in the picture - answer cattle or what animal is in the picture - answer cow. The word cattle is plural. I know it's a bit pedantic but it happens quite often here.

mousie4, actually the question was “Which” animal is pictured here which gives it a plural connotation. Also the answer cow may not be accurate as you can’t tell from the picture if they are male or female. Cows are females that have had a calf.
