I like to use an analogy when explaining the benefit of additional RAM to a computer..imagine your kitchen is the computer and you are the CPU cooking a meal. The ingredients represent the data, your countertops are RAM, and the pantry is your hard disk. it is quicker to grabs items from the counter top then running back and forth to the pantry. So more/larger countertops (aka RAM) allows for quicker processing. Not perfect but it helps to visualize the roles in your minds eye.

Bjach, actually you were correct the 1st time...RAM is used when downloading an app, as well as when running it. It is also used when you are booting up your device, etc., and is used until the device is shut off. Once shut off RAM will be "released" until the next startup of the device. When a device is out of RAM during use then it will begin "paging to disk" until RAM is "released".

The trouble with RAM though is that when you open a file, it copies the file and you change the lines in the copy. Once saved, markers are put on the previous bytes that tells itself the data here can be written over. if it hasn't been overwritten, a specialist might be able to go back in and recover it. but there could be gaps if there have been any saves since that file was opened.

I describe RAM as being like you just moved into a furnished house. everything tidy and put away. but as time passes, instead of utting things away in their place, they are set down wherever there is a place for it. Eventually, to set the table, you go to the porch for a plate, the bedroom to get a fork. the knife is in the loo, the glass in the living room. you get the idea. files in the computer are stored any place there is room for a part of it. eventually, this results in the computer taking more time getting all the bits together before the file is opened. This is easily fixed by some housecleaning, called 'defrag'. Short for defragment.
