Which meat is commonly used in a classic Italian Bolognese sauce?

Hmm! I make bolognese sauce, but I use red wine, chopped tomatoes and passata a well as celery, carrots and onions. I don't use milk. I like linguini pasta, the sauce adheres better than if you use spaghetti pasta
