What is the "solera system", used in the production of sherry?

I am not a professional and always love mixing and blending different drinks. I think the information given is true but I believe it really started as businesses to prolong and not maliciously deceive customers long ago. I am willing to guess this practice is practical in many products around the world in use. eg Mixing old products with old while not technically cheating is allowable. 😳
