What are those weird strings on the inside of your peeled banana?

Graham Y.N.W.A. JFT, Chimps peel bananas the opposite way to us. We tend to peel them from the stalk but a chimp uses the stalk but as a handle and peels theirs fro the other end which in fact is the correct way to peel a banana so I've read

The whole time, I avoided eating the strings of the bananas... I thought there would something bad happening to me if I swallow it but now it assured me... Never knew this...
