Who puts FLOUR in an omelette?? I was always told it was just a dash of water or milk in with the beaten eggs. And the omelette is my very favorite meal the human race ever came up with.

I worked at an omelette shop in the 70's in Manhattan Beach, CA, called the Koffee Kart. Sure they served pancakes and other traditional breakfast items, but the omelettes were why there was a waiting list to get in every weekend. I started working there in 1975 (weekends only) when I was 14, and did until 1979 when I was asked to work at the nicest spot in town, Orville & Wilbur's. Besides great steaks & seafood, it had what was voted as "best clam chowder in L.A.
