I have tried the gambit of peppers, including the Thai Chili, the Ghost Pepper & the Scotch Bonnet, etc., needless to say I do not need to "try" them ever again. They can add great heat, but for my taste, can ruin the possibility of tasting any other ingredients in a dish. IMHO.

My brother in law loves hot peppers and grows them on his farm. Was warned to wear gloves when picking the yellow Scotch Bonnets. My taste buds can't handle heat, only mild spices for me.

Centenarian, I did it once. Made buffalo style wing sauce from the bhut jolokia pepper. We had to cook the sauce outside because it was like mustard gas indoors. Eating the wings was like an endurance challenge 😂 though once you got acclimated to the spice level the flavor really was delicious
