When my father was young and cutting timbers for the coal mines, local beer joint called the Banner Inn, owner Blanche Vines. My father did not have $ sometimes until payday. so he would ask for a burger and beer and he would kindly pay on Friday. So Blanche called him Wimpy
And accross the street my father spied a 15 yr old girl, my Mother
His relations up till then called him Roy but there after everyone called him Wimpy.

Spinach at the time was used to indicate something was false as in to say something such as baloney. BS or spinach. The act of eating spinach was in and of itself a joke.
