In Japanese cuisine, soba is a variety of which food?

I did not know that much about buckwheat, which apparently is not really wheat, but more like a grass. it is often used as a ground cover and has a pleasant flower.

Buckwheat is produced in West Virginia, which surprisingly shares similar toporagraphy with Japan. Buckwheat cakes and sausage, done right (with maple syrup, of course) are a pleasurable experience, sure to tickle the palette, especially in autumn. ,

I enjoyed cold Soba noodles in Tokyo. So very good!

Never ate it but my younger friends love Japanese food including this. Old dogs...New tricks.....
