Which cooking method employs live fire and smoke to cook the food?

In much of of North America, direct heat is used for backyard barbecuing (e.g., steaks, hamburgers). Slow-cooked barbecue (e.g., pulled pork, beef ribs) is more popular in the US South and Texas. However, specialty restaurants in other areas feature slow-cooked barbecue. So good!
